Melt the butter in a large saucepan over a medium heat and fry the garlic and ginger for about 1 minute, stirring until fragrant and the garlic has just started to colour. Add the stock and a little salt, bearing in mind you are adding ham, and if using stock cubes these may also contain salt.
If the mixture starts to burn or stick to the bottom of the pan, pour in another splash of water and reduce the heat a little.

Place the cashews in a bowl and cover them with boiling water. Tip the cashews into a blender and blitz until smooth.
After 1 hour, when you are happy that the lamb is tender, stir in the cauliflower florets and lentils.
You will have to prod them a little to cover them in the sauce, adding a little more water if needed.
Stir in the cashew cream, spinach and chopped coriander, and then divide among bowls or plates.
