Stir in the curry powder and cook for about 30 seconds longer until it gives off a rich, nutty scent, then stir in the red lentils and the tomatoes. Bring to the boil and simmer over a low heat for 45 minutes until you have a thick soup and the lentils are tender, stirring occasionally, but especially towards the end to make sure it doesn't stick.

Stir the ham into the soup to heat through, then add the lemon juice and taste for seasoning.

Halfway through cooking the soup bring a small pan of water to the boil, add the green lentils and simmer for 20-25 minutes or until just tender, then drain them into a sieve and shake dry.

COOK'S NOTE The addition of ham and extra lentils turns this wholesome basic into an event, but it's a good everyday staple without these. Ladle the soup into hot bowls, and serve a spoon of lentils in the centre, scattered with parsley if wished. Or for instance you could add some shreds of leftover chicken (or other goody you have to hand) instead. Return to the pan and toss with a knob of butter and a little salt.

50g (2oz) Puy or French green lentils see Cook's Note

knob of butter

150g 5oz shredded ham hock (for example from Waitrose) or sliced roast ham cut into 1cm (½ in) dice

1 tbsp lemon juice

coarsely chopped flat-leaf parsley to serve optional

Melt the butter in a large saucepan over a medium heat and fry the garlic and ginger for about 1 minute, stirring until fragrant and the garlic has just started to colour. Add the stock and a little salt, bearing in mind you are adding ham, and if using stock cubes these may also contain salt.

If the mixture starts to burn or stick to the bottom of the pan, pour in another splash of water and reduce the heat a little.

Add the lamb chunks and fry, stirring, for 1 minute. Pour in 250ml of stock or water and bring to the boil. Give it a little stir every now and then to stop it sticking to the bottom of the pan. Leave them to sit for at least 30 minutes, then drain, discarding the water.

Melt the coconut oil in a large saucepan or casserole dish over a medium-to-high heat.

When it is hot, slide in the diced onions and fry, stirring regularly, for 4 minutes, or until they start to soften and turn translucent.

Put a lid on the pan and simmer for 1 hour, until the meat is just tender.

Keep checking on the curry during the cooking time and if you feel that too much liquid has been lost, add a little more.

While the curry is cooking, make the cashew cream.

Place the cashews in a bowl and cover them with boiling water. Tip the cashews into a blender and blitz until smooth.

After 1 hour, when you are happy that the lamb is tender, stir in the cauliflower florets and lentils.

You will have to prod them a little to cover them in the sauce, adding a little more water if needed.

Stir in the cashew cream, spinach and chopped coriander, and then divide among bowls or plates.
